Mocha Walnut Cake

My daughter has moved back to stay with us during the school break as her term 1 has ended. I am so pleased as the happiest thing is to have whole family spending time together.  

As she craved for some cakes that I baked previously, I decided to pick this Mocha Walnut Cake recipe as  I had not been baking this for more than a year plus this recipe was not posted before.

I guess I made a right choice as the recipe is indeed a keeper.   It's very soft, fluffy and nutty.  Most importantly is my daughter enjoyed it!

Here you go.. the Mocha Walnut Cake Recipe.

Ingredients:
-    50g Walnuts  (toasted and chopped)  }
-    50g Chocolate rice                                    
} premix together
-    ½ tsp baking power                                 }

-    10g Cake Flour                                            
-    4 Egg Yolks        
-    90g Caster Sugar  
(**cut down to 80g if u prefer less sweet)
-    100g Butter (melted)         }   Microwave
-    2 tbsp Milk                           
-    1 tsp Nescafe classic + 1 tsp hot water  } Premx together     
-     tsp Vanilla Essence 

-    50g Cake Flour                  
} sift together
-    1 tsp cocoa powder           
}
-    1/8  tsp salt                          
}
-    ½ tsp baking power        
}
-    1/8 tsp baking soda         
}

-    4 Egg Whites                   
-    35g Castor Sugar              
-    ¼ tsp cream of tartar                  
-    50g Walnut for topping  

Preparation
-    Preheat oven at 160*C.   Baking Time: 50 mins
-    Baking pan:  Pan lined base with baking paper and bake on the lowest rack. 
-    Sift the flour, cocoa poweder, salt, baking power and baking soda together 


Method
  1. Place the walnuts in a plastic bag, mix in chocolate rice, baking powder and 10g of cake flour.  Shake well and  put aside.
  2. Beat egg yolks and sugar at high speed (about 3-4 mins) until the ribbon stage.  
  3. Microwave butter for 20 mins or till melted.  Add in milk and put back to microwave for another 15 mins.  Immediately stir into egg yolk  mixture (in Step 2) with a whisk.
  4. Dissolve Nescafe powder in hot water, stir into above egg yolk mixture.  Mix in vanilla essence and dry ingredients (i.e. flour, cocoa power, salt, baking power and soda) till combined. Put aside.
  5. Whisk egg whites at high speed until bubbly formed (abt 40 sec).  Add in the sugar and cream of tartar and beat until stiff (abt another 1.5 mins).
  6. Fold 1/3 of the egg whites  into egg yolk mixture in Step 5,  followed by the walnut mixture in Step 1.  Repeat the same for remaining egg whites and walnut mixture until completed.  Don't overmix. 
  7. Pour the batter into the prepared pan, top with the walnuts and bake in a preheated oven at 160*C for 50 mins.
